Saute Rapini


Ingredients:


2 bunches of fresh rapini, chopped

1 cup of cooked chickpeas (if using canned, drain and rinse before using)

1 medium chopped onion

1 teaspoon garlic minced or fresh ginger

1-2 tbsp of extra virgin olive oil

Salt and pepper



1. In a saucepan, saute garlic and onion in olive oil until translucent.

2. Add the chopped rapini and saute.

3. Add salt and pepper to taste.

3. Cover and simmer until tender.

4. Add the chickpeas and stir for two minutes.

Serve as a side or meal. Use lemon to garnish.





Green Peas Soup




Ingredients:


3-4 Cups of fresh peas with shell

2 Celery stall chopped

2 Green onion stall chopped

1/3 cup of fresh unsalted cashews
